This Recipe for Maraschino Cherry Mini Muffins Is Yummy

I'm not a strawberry girl.  Never have been, never will be.  Don't get me wrong - I'll eat strawberry stuff.  I like strawberry cake and strawberry bread and strawberry candy, I really do.  It's just not my favorite.

So what is?  Anything with cherries.  I love cherries.  I don't drink beer, but hand me a tropical girly drink at the bar with plenty of cherries, and I'm in heaven.  I'm not a huge soda fan, but I can never say no to cherry limeade.  Oh, and a vanilla milkshake just isn't complete without plenty of whipped cream and a bright red cherry on top.  Perfection.

I've had a jar of maraschino cherries and some almond extract that I've been wanting to use for awhile.  I bake a lot - a little too much, judging by my waist size - but couldn't seem to find any drool-worthy recipes that combined the two ingredients.  Then I saw this recipe for mini maraschino muffins.

The recipe was simple enough - flour, milk (I used soy), vanilla, almond extract, an egg - typical muffin stuff.  I used wayyyyy more cherries than the recipe called for and also used a heavy hand with the vanilla and almond extract.  I wasn't sure what to expect, but the muffins definitely turned out well.  So well, in fact, that I had 10 of them. 

My boyfriend also loved them, which surprised me.  He's kind of traditional when it comes to food - give him some Hamburger Helper and a chocolate chip cookie, and he's good to go.  I made 36 mini muffins, and I have 8 left.  My daughter had 3, I had I guess my boyfriend had 11?  Yeah, they were that good.
