Rice is one of the most consumed foods on the face of the planet. It is relatively inexpensive to make, and a little really goes a long way. Try to eat anything else after eating a huge bowl of rice - your tummy will be too full. Now, unlike most people, I detest savory rice. It does nothing for me, and I will turn down a dinner invitation if I know that it will be served.
Not too long ago, however, I was introduced to several different rice desserts. Really? Rice for dessert? At first, I was sickened by the thought, but being a lover of anything sweet, I decided to try out some of these treats. And boy, was I surprised. They were actually tasty, and quite easy to make! Now whenever the budget is tight, but I am craving something sweet, I whip up one of these concoctions.
Sweet Rice
Perhaps the simplest way to enjoy a dessert rice is by making a batch of sweet rice. The idea could not be easier. Prepare rice as you normally would, but instead of using water or broth, add milk and sugar. Allow the rice to boil in the liquid until it is tender. Serve with a sprinkling of sugar and cinnamon on top, or try it with your favorite fruit compote.
Rice Pudding
Whenever I would wander past the refrigerated pudding section at the grocery store, I would be disgusted by the rice pudding cups. They looked like inedible slime. When I finally got the chance to taste a homemade version, my opinion was forever changed. In this dish, rice is combined with brown sugar, whole milk, eggs, cinnamon and raisons to make a thick, sweet treat. It is best served warm on a cold day.
Mexican Rice Drink
A popular dessert drink in Mexico is horchata, a sweet rice drink. It is made by blending rice, water and cinnamon together. The mixture is then strained through a piece of cheesecloth. More cinnamon and vanilla is added to taste. The final result is a sweet beverage that is best when chilled.
The next time you need a low cost dessert, think rice. You will be surprised at how sweet this versatile grain will be in your mouth.
