These cinnamon rolls are absolutely delectable, you will not be disappointed! My mother used to make them on Sunday mornings for a little breakfast snack, yummy.
What you will need:
Rolls/Dough
1 ¼ Ouce package active dry yeast
1 Cup warm milk (105 to 110° degrees)
1/2 Cup granulated sugar
1/3 Cup margarine, melted
1 tsp salt
2 eggs
4 Cups all-purpose flour
Cinnamon Sugar Filling
1 Cup packed brown sugar
2 ½ TBS Cinnamon
1/3 Cup margarine, softened
Icing
1 Stick margarine, softened
1 ½ Cups powdered sugar
1/4 Cup (2 ounces) cream cheese
1/2 tsp Vanilla extract
1/2 tsp Almond extract
1/8 tsp salt
Rolls:
In a large mixing bowl, dissolve the yeast in the warm milk. Mix in the sugar, margarine, salt and eggs. Slowly add the flour and mix well. Dust your hands lightly with flour and knead the dough into a large ball. Put the ball of dough in a bowl and cover, letting the dough rise in a warm place for about an hour, or until the dough has doubled in size.
Roll the dough out on a lightly floured surface. Make sure to roll the dough flat enough so that it is about a ¼ of an inch thick and it should be around 20 inches long and 15 inches wide.
Preheat your oven to 400° F degrees. While the oven is pre-heating, start your cinnamon sugar filling.
Filling:
In a medium mixing bowl, combine the brown sugar and cinnamon.
Spread the softened margarine over the rolled out dough evenly, and then sprinkle your brown sugar and cinnamon mix evenly on top, over the whole surface.
Start to roll the dough from one end of the long side to the other end. Cut the dough into 1 ½ inch thick slices and place up to 6 at a time in a lightly greased, evenly spaced out baking pan. Let the rolls rise in the pan for another 30 minutes, doubling their size.
Bake rolls for 8 to 13 minutes or until lightly golden brown (do not over bake, otherwise they will be tough to eat).
While the rolls are baking in the oven, start the icing. In a medium mixing bowl combine together the softened margarine, powdered sugar, cream cheese, vanilla extract, almond extract and salt, mixing well with an eclectic mixer until fluffy and creamy.
When the rolls come out of the oven, let them cool for 3 minutes. Then coat each one generously with the icing. Enjoy these delectable cinnamon rolls!
